Anyway, I might as well propose an idea before I suggest a color to add to the list.
To add to the variation of transformations from color energy, so we don't have to worry about coming to a dead end (since, for a couple of reasons, using colors in and of themselves has a great limitation), why not have a default transformation with the color energy in its raw form, and have it produce varying effects when a fruit/vegetable/other kind of food is used as a medium. The idea is based on the simple concept of how various forms of energy/matter travel and/or react differently when exposed to differing mediums/environments.
As an example, here's the color that I'd like to add: pink. In its raw form, it transforms those affected by it into what they think the epitome of cute is. When delivered by an artichoke (the edible, heart portion; thus becoming a heartichoke), those who eat it become magical girls (with your theme of choice), who are optimistic, altruistic and, above all, full of love. And those who eat the discarded portion of the pink-imbued artichoke (the choke), after it's left out long enough to start turning brown (which isn't long,) become villains, who feel that they have been abandoned by society and are full of hate and desire revenge.
