Neon Genesis Evangelion, and by extension, the new quadrology which is leaps and bounds even more awesome.
Ghost in the Shell Stand Alone Complex and other associated material like the second season, and Stand Alone Complex
And for something new, I'm going to say Xam'd Lost Memories, because thus far, I have loved that series SO much.

There's a bunch of other really neat series I could list, but I couldn't possibly put them in any sort of order. And really, I'd put Code Geass in my top 3, but that'd only be if Xam'd smacks me in the face with stupid. It's really such a moving and good anime series.

Gee top 3 huh...

1- Naruto (Yeah cleche, but this is what showed me the door to the Otaku world)
2- Dragon Ball Z ( Can't beat aregubaly the best anime ever, even though I look at it now and I can't understand what I found so cool about a guy screaming his head off for an entire episode just to power up :/ )
3- The Melancholy of Haruhi Suzumiya ( I just can't place my finger on it why I like this this anime, I just do... maybe the bunny girls had to do something about it... )

If I could make the list longer I'd add DeathNote, Bleach, Zoids, Sailor Moon (I...well... I'm not gonna even bother...), Digimon, D. Gray man, Case Closed, Inuyasha, Gundam series, Hamtaro (WTF?), Cardcaptor Sakura ( No comments... ) , Kenshin, Yu Yu Hakusho, YU-GI-OH!!!!!! (Cue transformation that no one ever seems to notice... <_<) and could keep going, but I don't wanna bore you ^^"

That isn't possible for people with no brain. Besides which, I probably have ideas in my had that are more potent in nature than the ones in NGE. Simple as that.

Sailor Moon - Still is and most likely always will. What this series made me feel spiritaly. I know that sounds werid but eh.

Gurren Lagaan! Just who the HELL do you think I am!?

G Gundam - Though I really need to see it again all the way through.

Animes NOT on that list. Neon Genesis Evangelion. Sorry but not a fan. Unless we are talking Re-take. Re-take was awsome, but in doujinshi format only.
